Life's easier when you don't peel!
Not to mention healthier. If you're still peeling your roasted veg, please stop. You're throwing so much goodness away and creating unnecessary prep time while depriving your gut of dietary fibre. Olive oil, lemon juice, and some oregano & thyme on the potatoes (Whole Baby Red Royales & Carismas). Optional cinnamon on the sweet potatoes (don't knock it till you try it). Salt if your blood pressure is OK. Yum!
